To make healthy snacks that look exactly like a leprechaun’s top hat, cut the majority of a cucumber into cylinders, then cut those down the middle so each side of the cylinder lays flat. Cut the rest of the cucumber into thin slices. Then, use a diced yellow bell pepper or small cubes of cheddar cheese and strips of a lighter-colored, white cheese to assemble the hat. Use honey or agave nectar to hold it all together!

Using spinach, flour tortilla wraps, and a shamrock-shaped cookie cutter, cut out shamrock chips and arrange them on a baking sheet. Lightly spray them with cooking oil, sprinkle with salt, and bake for a few minutes until crispy (or you could use an air fryer, if you have one). You can even serve the chips with your child’s favorite dip. If you want green, try guacamole or edamame hummus! To serve the chips with a “pot of gold,” add warmed cheese dip to the mix.

Blend frozen bananas and some spinach to create a perfectly green, frozen treat! You can even add in other ingredients based on your little one’s taste: chocolate chips, nut butter, vanilla extract, mini marshmallows, or honey for added sweetness. Try adding nuts, cereal, or seeds for some extra crunch!
After washing some green grapes, roll or toss them in lime JELL-O powder. Refrigerate them for a few hours, then serve! You could even prepare your child’s favorite sweet dip, such as a yogurt sauce, to go with it.
Start by slicing a crisp, green pepper towards the smaller, pointier end. When you cut thin slices, you’ll see the shape resembles a clover. Then, toast English muffin halves and top with a sprinkle of cheese and a pepper slice. Arrange your muffin halves on a baking sheet, then broil for a few minutes until the cheese is melted. You could even bake your concoction in a muffin pan (a mini muffin pan is even better) to make the perfect mac n’ cheese snack bites.
