Whether your child’s classroom is throwing a St. Patrick’s Day party or you’re planning some sneaky green surprises at home, chances are you’ve been looking for some green recipes your little leprechaun will love! Not only did we find some cute and fun snack ideas, but they’re also healthier than typical holiday treats. Leprechaun Hats

To make healthy snacks that look exactly like a leprechaun’s top hat, cut the majority of a cucumber into cylinders, then cut those down the middle so each side of the cylinder lays flat. Cut the rest of the cucumber into thin slices. Then, use a diced yellow bell pepper or small cubes of cheddar cheese and strips of a lighter-colored, white cheese to assemble the hat. Use honey or agave nectar to hold it all together!

Shamrock Tortilla Chips

Using spinach, flour tortilla wraps, and a shamrock-shaped cookie cutter, cut out shamrock chips and arrange them on a baking sheet. Lightly spray them with cooking oil, sprinkle with salt, and bake for a few minutes until crispy (or you could use an air fryer, if you have one). You can even serve the chips with your child’s favorite dip. If you want green, try guacamole or edamame hummus! To serve the chips with a “pot of gold,” add warmed cheese dip to the mix.

Green Ice Cream

Blend frozen bananas and some spinach to create a perfectly green, frozen treat! You can even add in other ingredients based on your little one’s taste: chocolate chips, nut butter, vanilla extract, mini marshmallows, or honey for added sweetness. Try adding nuts, cereal, or seeds for some extra crunch!

Leprechaun Candy

After washing some green grapes, roll or toss them in lime JELL-O powder. Refrigerate them for a few hours, then serve! You could even prepare your child’s favorite sweet dip, such as a yogurt sauce, to go with it.

Shamrock Toasties

Start by slicing a crisp, green pepper towards the smaller, pointier end. When you cut thin slices, you’ll see the shape resembles a clover. Then, toast English muffin halves and top with a sprinkle of cheese and a pepper slice. Arrange your muffin halves on a baking sheet, then broil for a few minutes until the cheese is melted. You can even add in a little pizza sauce under the cheese to turn this snack into a mini pizza!

Green Mac n’ Cheese

It’s just as tasty as regular mac n’ cheese, but healthier and much greener! Make macaroni pasta like normal, but add in spinach for a green tint. Then, stir in cheese as well as broccoli and peas for a healthy, green boost. Bake the mixture so it comes out bubbly and green – just how a leprechaun would want it! You could even bake your concoction in a muffin pan (a mini muffin pan is even better) to make the perfect mac n’ cheese snack bites.

Green Fruit Kabobs

Cut up slices of green apples, pears, kiwi, and honeydew melon. Then, assemble the fruit slices in alternating patters on skewer sticks, adding in some green grapes, too. If desired, serve these with your child’s favorite fruit dip!

Leprechaun’s PB&J

Once you remove the core from a green apple, cut it into thick slices. Then, spread one slice with your preferred nut butter and the other slice with your preferred jam or jelly. Press them together as you would a regular sandwich. Following this recipe, you could even substitute the jam for granola and raisins, or other ingredients your child prefers!

Avocado Toast Clovers

Using a shamrock-shaped cookie cutter, cut out pieces from whole wheat bread, then toast lightly. Mash up some avocado and mix in your preferred spices or flavoring, such as cilantro, lemon juice, onion powder, or salt and pepper. Spread a teaspoon or two onto each piece of toast, then serve!
